Racuchy

ingridients: 1/2 liter kefir or sour milk, 2 eggs, 350-400g flour, 1/4 teaspoon of sofa, 2-3 spoons of powder sugar, 3 big sweet apples (sliced), preffered frying oil or fat

  1. Sieve the flour into a mixing bowl.
  2. Measure 1/2l (500ml) of kefir or sour milk. Add it to the flour.
  3. Add soda, eggs and powder sugar to the bowl. Mix thorougly with electric mixer. The batter should be thick, but still fluid. If it's too thick, add some more kefir to achieve desired consistency.
  4. Wash, peel and slice (or grate) halved apples. Slices should be thin but not very thin. Add sliced apples to the batter, fold them in with stiff spatula.
  5. Warm up the frying pan with your frying fat or oil of choice. Ladle out a spoon of batter on the pan, spread it to form a small pancake. Fry until golden on both sides.
  6. Serve with jam or powdered sugar.
